This is a style of bottling that allows some yeast to remain in the bottle. A minute 'paint layer' of yeast at the bottom of the bottle allows the carbonation and character of the beer to develop over several months and sometimes years. Beer can therefore be cellared like wine if appropriate beers are selected. Stronger beers bottle condition better and I'm going to have a limited amount availaible from the brewery for the enthusiast only.
Care must be taken when pouring to keep the yeast in the bottle, but it can also be consumed and is harmless.
