We aim to produce an alternative to the bland, mainstream lagers that dominate the shelves and use only natural ingredients, sourced locally wherever possible. We are also proud to be a part of the recent renaissance in craft cider making in the heart of New Zealand apple country.
Bottle conditioned ale is a real treat and like a good wine can be cellared to be enjoyed years later. Yeast is reintroduced to the bottle at bottling and encouraged to undergo a secondary fermentation in the bottle. This produces added complexity to the ale and according to the Campaign For Real Ale in the UK is how bottled beer should be drunk. It is neither 'dead' nor filtered and remains a living, breathing product as all good beer should be! When opening be sure to pour slowly to retain the sedement in the bottle, this is harmless and very healthy to consume.
